Mortadella has its origins in the Emilian city of Bologna, although
today it is also produced in the nearby cities of Modena and Reggio, and
in the regions of Lombardy, Veneto, and Piedmont. Made from 60% lean pork
meat and 40% pork fat, mortadella is stuffed into a casing, shaped into a
long, fat cylinder, and studded with black peppercorns and/or pistachios
(as with this type available from Antico Mercante). Authentic Italian
mortadella has recently become available on the American market after
decades of ban from import. |

Prosciutto San Daniele "Principe" DOP

Aged 14 months.
The origins of Prosciutto di San Daniele go back to Celtic-Roman
times. In the Middle Ages, the town of San Daniele was a dependency of
the Patriarchy of Aquileia whose Patriarch and Bishop-Count established
his summer residence there and, exercising his feudal powers, demanded
the payment of taxes in the form of ham. The large-scale production of
Prosciutto di San Daniele began early this century.
It is distinctively shaped like a guitar and the meat is reddish-pink
in color. It has a pronounced aroma, a sweet and delicate flavor and an
unmistakable after-taste. |

Bresaola "Salumeria Biellese"

A specialty of the Italian Alps, this air-dried beef is faithfully
reproduced by Salumeria Biellese: cured in salt and spices, bathed in
wine, and air-dried for 2 months.

Cacciatorini

A dry Italian salami. It is seasoned with black pepper, garlic,
spices, dry white wine, and packed into a small natural casing. It is
then dry aged for one month or longer. When served, it is sliced thin for
use in sandwiches, as an appetizer with cheese, or as a topping for
foods. Dry sausages such as Italian cacciatorini are commonly thought of
as hunter style salami, since it is made as a small rustic salami to be
carried in hunter's pockets and eaten as a lunch meal. |
